Ingredients:
For the chicken marinade:
2 lbs boneless skinless chicken thighs (or chicken breast), cut into bite-sized pieces
2 tbsp paprika
2 tsp black pepper
Zest from one lemon
1 tbsp fresh lemon juice
3 cloves garlic, finely minced
2 tsp salt
2 tbsp olive oil
For the lemon pepper garlic butter:
½ cup salted butter, softened
2 tsp black pepper
2 tsp paprika
1 tbsp fresh lemon juice
Zest from one lemon
1 tsp honey
1 tsp garlic, grated or finely minced
Instructions:
1️⃣ If using wooden skewers, soak in water for 15-30 minutes.
2️⃣ In a bowl or Ziploc bag, mix chicken and all marinade ingredients. Marinate.
3️⃣ Prepare the lemon pepper garlic butter by combining all butter ingredients. Set aside 2 tbsp for later use.
4️⃣ Skewer the chicken tightly onto wooden or metal skewers.
5️⃣ Air fryer method: Cook at 400°F for 7-8 minutes, baste, flip, and cook for another 6-7 minutes.
BBQ method: Grill over medium-high heat for 5-6 minutes per side, basting before and after flipping.
Pan-fried method: Cook in a pan over medium-high heat for 6-7 minutes per side, basting before and after flipping.
6️⃣ Once cooked, baste with reserved butter and serve immediately.
