4 fish fillets (such as cod, tilapia, or halibut) Salt and black pepper to taste 1/4 cup all-purpose flour 2 tablespoons olive oil 2 tablespoons unsalted butter 3 cloves garlic, minced 1/4 cup chicken broth 3 tablespoons lemon juice 1 teaspoon lemon zest 2 tablespoons fresh parsley, chopped Lemon slices, for garnish
Instructions:
1. Prepare the Fish: Pat the fish fillets dry with paper towels. Season both sides of the fillets with salt and black pepper. Lightly coat the fillets in the flour, shaking off any excess. 2. Cook the Fish: In a large skillet, heat the olive oil over medium-high heat. Add the fish fillets and cook for about 3-4 minutes on each side, or until the fish is golden brown and cooked through. Remove the fish from the skillet and set aside. 3. Make the Lemon Butter Sauce: In the same skillet, add the butter and melt over medium heat. Add the minced garlic and cook for about 1 minute until fragrant. Pour in the chicken broth and lemon juice, scraping up any browned bits from the bottom of the skillet. Let the sauce simmer for 2-3 minutes until slightly reduced. Stir in the lemon zest and chopped parsley. 4. Serve: Return the fish fillets to the skillet, spooning the lemon butter sauce over the top. Garnish with lemon slices and additional chopped parsley if desired. Serve the fish fillets immediately with your choice of side dishes, such as steamed vegetables or rice.
